Fluffy Pankcakes

Ingredients
300g all purpose | plain flour, (2 cups | 10 oz)
50g granulated sugar or sweetener, (¼ cup | 2 oz)
4 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
450ml of semi skimmed milk
50g butter
2 teaspoons pure vanilla extract
1 large egg
Option fruit (blueberry / strawberry …)
Preparation
1. Mix together the flour, sugar, baking powder, baking soda and salt in a large-sized bowl. In the centre of the mix make a hole and add the milk, slightly cooled melted butter, egg and vanilla extract.
2. Whisk the wet ingredients together until smooth (there may be a couple of lumps but that’s okay). If you find the mixture too sick to pour, add a little more milk. Set the pancake batter aside and start heating the pan.
3. Heat a nonstick pan over low-medium heat and wipe over with a little butter to lightly grease pan. Pour 50g (¼ cup) of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.
4. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
Serve with maple syrup, jam, honey, fruit, ice cream or yoghurt, or enjoy plain!
